Our ancestors have been cooking on open flames for centuries. Knowing how to cook is a necessity for all of us. Cooking on an open fire can be a great activity with your family while teaching your kids a useful skill. Whether you have a permanent or portable fire pit cooking on it makes for great food and fun. You may be having a large gathering with friends or a simple meal with your family, either one your fire pit can be a great way to add uniqueness to your meal. Just about anything that you cook on your BBQ grill can be just as good and maybe better on your fire pit.

You can enjoy the outdoor cooking experience with any type of wood; any wood burning fire gives food a unique flavor. However, you can also experiment to get specific smoke flavors in your food. Using different types of wood can accent your food with different flavors. There are many different types of wood you can use but you need to be careful that you are going to get a flavor you like.

One key component to flavoring food when using different types of wood is the length of cooking time. The longer you cook the food the more flavors your food will pick up. If you are cooking foods for shorter periods of time the food will not pick up specific flavors. So don’t waste time trying to give specific flavor to fast cooking foods. The specific flavor is going to be dependent on the type of wood you use. Some woods will give a milder flavor while others will give stronger flavors. Woods such as almond, apple, apricot, cherry and citrus will give a milder light fruity flavor, while woods such as birch, maple, and oak give stronger but not over powering flavors. Alder is a traditional wood for smoking Salmon. Woods such as Walnut and Hickory can add strong over powering flavors.

Using a gas fire pit is another great way to cook food. You can use different types of wood chunks for different flavors. You simply moisten the wood chunks, you don’t want them dripping, then wrap them in foil. Poke 2 or 3 holes in the foil to allow smoke to escape. Lay them between the grill and burner. The foil will keep the ashes from getting into the burner and the smoke will flavor your food.

Cut in half length wise

Scrape seeds out of middle

Cover with Zesty Italian dressing

Sprinkle with Parmesan cheese

Wrap in foil

Cook on fire until tender

Meat and Vegetable Shish Kabobs

Marinade your favorite meat chunks

Cut up favorite vegetables and marinade – mushrooms, pepper, onion, tomatoes

Place on wooden or metal sticks
alternating meat and vegetables

Place on fire until meat is cooked
through and vegetables are tender

So whatever it may be, a quick hamburger or hot dog meal that will cook quickly or your favorite poultry, leg of lamb or steak, get started now cooking on your outdoor fire pit.

Are You Cooking Meals from a Broken Cookbook

Burn your recipes!” If youve been following me for any amount of time now, youve heard me utter that statement time and time again. Its not that Im entirely against using recipes for home cooking, its more because I see cooking meals as a personal art form or your kitchen culinary expression.

In fact, home cooking recipes are especially useful if youre looking for new ideas and flavor combinations. Recipes are useful for cooking meals if you want to try to duplicate something exactly.

Here are some of the things that recipes will tell you:

The ingredients to use
The correct weights and measures for the ingredients
The temperatures and degrees to use
How much time you should cook
What steps to take and when

But, you cant expect recipes to tell you everything that you need to know to make the meal come to life. I like to make analogies between cooking and music. Lets take sheet music for example. There are things that sheet music doesnt tell the piano player. There are variations in tone, pace, and interpretation. The musician has to bring the music to life through his or her own interpretation of the music that they are reading.

Here are some of the things that recipes dont tell you:

Variations in ingredients/substitutions
Variations in measurements/ mistakes in measuring
Variations in oven temps/stove temps
Variations in time

There are very few celebrity chefs that I enjoy. An exception is Alton Brown. I enjoy Alton Browns show because he also explains why hes taking the steps hes taking as well as how different ingredients, temperatures, etc. affect the food that you cook. One day when I was watching Alton, he was cooking a popover recipe that looked great. As I was watching, I thought that the amount of salt he used would make it too salty for me. But, when I tried to make the recipe, I used his exact measurements because, well, hes Alton Brown. Turns out the popovers were WAY too salty!

Next time, Ill take out some of my own recipe books I use for inspiration and point out some of the ways that I know the recipe book is broken. My goal is to help you to increase your kitchen culinary skills by using your home cooking recipes to cook meals that you can be proud of again and again.

Cooking for Coeliacs Ten Top Tips

Cooking for someone with Coeliac Disease, which means they are intolerant to both wheat and gluten, can be a daunting task. As you will find from reading this article, if you are well prepared then cooking them need not be scary, nor should it compromise your ability to cook a great tasting and healthy meal.

1.Probably the most important thing to remember is to always check the labels of any food that you are using, to make sure that the food does not contain any hidden gluten. It is vital to remember that hidden sources of gluten include preservatives, additives and stabilizers found in processed food. A great way to combat this problem is to cook only with basic ingredients that you are sure do not contain gluten, omitting products such as pre-made sauces and dressings.

2.As mentioned before, using good, fresh foods is one of the best ways to ensure that whatever meal you are cooking will be suitable for Coeliacs. So look for dishes that include fresh meat, fresh fruit & vegetables, fresh herbs, egg and dairy products and pure oils and vinegars. Knowing this gives you a large scope to be able to cook a variety of delicious dishes, without having to worry about using any ingredients that are not safe.

3.If you have your heart set on using ingredients, such as flour, that are not suitable for Coeliacs, there are a large range of alternatives that are gluten free. Instead of using ordinary flour you could instead use any of the following rice flour, potato flour, corn flour, cornmeal, soya flower and buckwheat flour. With these substitutes you can cook many dishes that would not normally be suitable.

4.Whilst it is gluten that gives things like bread their elasticity and cakes their spring, this does not exclude you from baking either of these items when cooking for a Coeliac. Gluten-free cakes actually work very well. You can use flour alternatives such as ground cornmeal or a mixture of rice flour and ground almonds to create light and delicious gluten-free cakes. A great tip when doing so is to use a mixture of flours along with ground almonds so the cake remains moist when baked.

5.When purchasing the ingredients for your meal, do not forget to check out the specialist sections in health stores and most big supermarkets. These sections will include a plethora of wheat and gluten free products that you can use in your meal, safe in the knowledge that they have been properly tested and are safe to be eaten by Coeliacs.

6.Remember that for some people even the tiniest trace of gluten or wheat in their food could lead them to become very ill. With this in mind make sure that your food preparation areas, including any chopping boards and knives used, have been thoroughly cleaned before use. Do this to ensure that no traces of wheat or gluten from previous meals remain on the utensils and are transferred into your otherwise safe dish.

Grocery Shop to Cook on a Budget

Cooking at home is certainly more cost effective than eating out. But in order to cook on a budget, it doesnt mean that you have to buy cheaper food. Generally, cheaper food is less healthy for you, and everyday cooking should call for the most wholesome ingredients you can find.

If you have stress over cooking at home while still cooking on a budget, the first place to start is in the grocery store where your food bill originates. There are some simple ways that you can lower your grocery bill without having to buy inferior products and still make cooking at home nutritious and fun.

First, know your basic portions for the people for whom you cook. The following list gives you the averages for each type of food product that Im going to discuss today (per meal): Protein = 5 ounces raw protein Vegetable = 4 ounces raw vegetable Starch = 3 ounces raw starch

What this means is that if youre cooking for four people, 5 ounces of raw protein times 4 people is 20 total ounces. Thats less than a pound and a half total. Now, you have a quantifiable number to buy. Dont buy the three pound container of chicken breasts, youll over-cook, over-portion and waste food and money.

Be able to do some simple math while in the grocery store, because packages are down-sizing. Notice that many boxes of pasta are no longer a full pound. Many have been down-sized to 12 ounces, but the price not down-sized appropriately. You need to figure out the cost per ounce, or some common denominator so you can compare the products correctly.

However, you also have to keep this in mind when you are thinking about portion sizes. In my household, I prepare 5.3 ounces of dry pasta for two people. This gives me three meals out of a 1 pound box. However, if I can only buy a 12 ounce box, its easy to just make the whole box. Dont! The result will either be that you overeat or have to throw leftovers away. Be aware of the portions and save the uncooked leftovers in the box for another day. Your stomach and your pocket will thank you.

Cooking at home can save you more money than ever when you know your portions. Knowing your portions and paying attention to package sizes will make you able to purchase with your cooking in mind and not over-buy, pay the highest price per ounce, or throw the leftovers away. Your goal for cooking on a budget is to purchase only what youll cook, and cook only what you purchase. This is everyday cooking with your budget in mind.
